Almas - Persian for “diamond” - is among the rarest caviars in the world. Harvested from mature albino sturgeon, its pale, lustrous pearls deliver an extraordinarily delicate, buttery flavour with a hint of nuttiness. Served chilled with mother-of-pearl, never metal.
